Zucchini meat sauce

Zucchini meat sauce Also known as (MESOV TUTUM) in Armenian

Ingredients:
-1 lb. ground beef
-2 med. onions, chopped
-2 tbsp. oil
-tomato sauce, or paste to taste
-salt, pepper to taste
-2-3 lbs. zucchini

Instructions:
-In frying pan, brown and onions ground
beef in oil until light brown.
-Add tomato paste or sauce.
-Add salt and pepper and about 2 cups of water. Set aside.
-Peel zucchini and slice into ½" rounds.
-Line bottom of saucepan with sauce and top with layer of zucchini. Alternate with the rest of zucchini and meat mixture,
ending with meat mixture.
-Bring to boil and lower heat to simmer, partially covered. Cook until zucchini is tender, about 40 minutes.
