Greek Spinach Pie

Looking for a light and low-fat meal, try this Greek spinach pie.

Ingredients:
To prepeae the dough you need:
-3 cups all purpose flour
-1 cup warm water
-2 tbl spoons oil
-1/2 spoon oregano
-dash of salt

Mix all the ingredients, knead for about 2-3 minutes,
start adding flour until does not stick to your hands.
Separate into 3 equal parts.

The filling:
-1 pound of thawed frozen spinach
(Chopped leaves)
-2 chopped green shallots or 1/3 white onion
-1/2 cup finely chopped parsley
-1/3 pound feta cheese
-salt, pepper, thyme

Mix ingredients

Direction:
-Roll out the 3 dough balls, little larger than your baking pan 8"x12"
-Grease the pan and place the first layer, with ends hanging over the pan rim.
-Add half of the filling.
-Now place the second layer of the dough and add the rest of the filling.
-Place th elast layer and fold all the edges together.
-poke a few holes, enough deep to go through second layer of dough.

Bake at 400F for about 45minuts.
