Greek Lemon Soup

You can't find easier and more delicious soup than this Greek Lemon Soup.

No matter which part of the world you are located , you can easily find the following ingredients in any store or market.

Ingredients:

2 quart Chicken Broth
2 lemons for fresh juice
3 Large Eggs
2 1/2 cups of Orzo

Yes thats all you need to make a perfect Greek soup.

Instruction:

In a Large saucepan Bring the chicken broth to a boil.
after lowering the heat, keep the cover off and stir the Orzo, simmer about 15 minutes, until pasta is cooked.
Turn off the stove and leave the pan.
Use a large bowl for separating the whites from the eggs, beat well for few minutes.
when white is foamy, In the same bowl add the egg yolks and continue beating till they are mixed well again, should take couple of more minutes.
While beating slowly add the fresh lemon juice and 3 cups of the hot chicken broth in a thin stream.
vigorously stir the orzo and remaining hot broth.
Pour the mixed egg and lemon into the pan while still stirring.
While pan is on very low heat keep stirring, soup will start thickening and the broth will brake down. Now it's time to serve hot.
