Easy quick vacation meals

EASY quick vacation meals to make for a lot of people?

We are going on vacation in a couple weeks and I have to cook one night.
I need something very quick and easy. Does anyone have any ideas?? I'm not looking for any soups or salads. no tacos or lasagna as people are already making those.
So far I have thought of hamburgers,sloppy joes or ordering pizza but that is expensive. There are about 12 or 14 people. Does anyone know of anything normal and fast??? Thanks!

Four-Cheese Pizza

or you could make your own pizza which would be much cheaper than ordering it and add whatever toppings you want.

INGREDIENTS:

1 (1 pound) loaf frozen bread
dough, thawed
1 large sweet red pepper,
chopped
1 large green pepper, chopped
1 cup shredded mozzarella
cheese
3/4 cup shredded Swiss
cheese
1/2 cup grated Parmesan cheese
1/2 cup crumbled feta cheese
2 tablespoons minced fresh
parsley
1 tablespoon minced fresh
basil
3 plum tomatoes, thinly sliced
1 tablespoon olive or vegetable
oil
2 garlic cloves, minced

DIRECTIONS:

1. On a lightly floured surface, roll dough into a 15-in. x circle. Transfer to a greased 14-in. pizza pan; build up edges slightly. Prick dough several times with a fork. Bake at 400 degrees F for 8-10 minutes or until lightly browned. Remove from the oven.
2. Reduce heat to 375 degrees F. Sprinkle chopped peppers, cheeses, parsley and basil over crust. Arrange tomato slices over top. In a small bowl, combine oil and garlic; brush over tomatoes. Bake for 15-20 minutes or until cheese is melted. Let stand for 5 minutes before cutting.

Pizza Casserole

INGREDIENTS:
2 cups uncooked egg noodles
1/2 pound lean ground beef
1 onion, chopped
2 cloves garlic, minced
1 green bell pepper, chopped 1 cup sliced pepperoni
sausage
16 ounces pizza sauce
4 tablespoons milk
1 cup shredded mozzarella
cheese

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Cook noodles according to package directions.
3. In a medium skillet over medium-high heat, brown the ground beef with the onion, garlic and green bell pepper. Drain excess fat. Stir in the noodles, pepperoni, pizza sauce and milk, and mix well. Pour this mixture into a 2-quart casserole dish.
4. Bake at 350 degrees F (175 degrees C) for 20 minutes, top with the cheese, then bake for 5 to 10 more minutes.

Chicken Stir-Fry

INGREDIENTS:

4 (4 ounce) boneless skinless
chicken breast halves
3 tablespoons cornstarch
2 tablespoons soy sauce
1/2 teaspoon ground ginger
1/4 teaspoon garlic powder
3 tablespoons cooking oil,
divided 2 cups broccoli florets
1 cup sliced celery (1/2 inch
pieces)
1 cup thinly sliced carrots
1 small onion, cut into wedges
1 cup water
1 teaspoon chicken bouillon
granules

DIRECTIONS:

1. Cut chicken into 1/2-in. strips; place in a resealable plastic bag. Add cornstarch and toss to coat. Combine soy sauce, ginger and garlic powder; add to bag and shake well. Refrigerate for 30 minutes.
2. In a large skillet or wok, heat 2 tablespoons of oil; stir-fry chicken until no longer pink, about 3-5 minutes. Remove and keep warm. Add remaining oil; stir- fry broccoli, celery, carrots and onion for 4-5 minutes or until crisp-tender. Add water and bouillon. Return chicken to pan. Cook and stir until thickened and bubbly.

Four Cheese Macaroni

INGREDIENTS:

1 tablespoon vegetable oil
1 (16 ounce) package elbow
macaroni
9 tablespoons butter
1/2 cup shredded Muenster
cheese
1/2 cup shredded Cheddar
cheese
1/2 cup shredded sharp
Cheddar cheese 1/2 cup shredded Monterey
Jack cheese
1 1/2 cups half-and-half
8 ounces cubed processed
cheese food
2 eggs, beaten
1/4 teaspoon salt
1/8 teaspoon ground black
pepper

DIRECTIONS:

1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain well and return to cooking pot.
2. In a small saucepan over medium heat, melt 8 tablespoons butter; stir into the macaroni.
3. In a large bowl, combine the Muenster cheese, mild and sharp Cheddar cheeses, and Monterey Jack cheese; mix well.
4. Preheat oven to 350 degrees F (175 degrees C).
5. Add the half and half, 1 1/2 cups of cheese mixture, cubed processed cheese food, and eggs to macaroni; mix together and season with salt and pepper. Transfer to a lightly greased deep 2 1/2 quart casserole dish. Sprinkle with the remaining 1/2 cup of cheese mixture and 1 tablespoon of butter.
6. Bake in preheated oven for 35 minutes or until hot and bubbling around the edges; serve.

Easy Chicken Rice Casserole

INGREDIENTS:

6 skinless, boneless chicken
breast halves, cut into bite size
pieces
2 cups milk
2 cups uncooked white rice 2 (10.75 ounce) cans
condensed cream of chicken
soup
1 teaspoon seasoned salt

DIRECTIONS:

1. Preheat oven to 350 degrees F (175 degrees C).
2. In a medium bowl combine the milk, rice, soup and seasoned salt if desired. Mix well. Pour mixture into a lightly greased 9x13 inch baking dish. Add the chicken pieces.
3. Cover dish tightly with aluminum foil and bake in the preheated oven for approximately 90 minutes or until rice is done, stirring every 30 minutes. Uncover the dish and bake for another 15 minutes to allow the rice to brown

Tater Tot Casserole

INGREDIENTS:

1 (32 ounce) package frozen
potato rounds
1 (16 ounce) container sour
cream
1 cup shredded Cheddar
cheese 1 (10.75 ounce) can
condensed cream of
mushroom soup
1 (6 ounce) can French-fried
onions

DIRECTIONS:

1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
2. Arrange tater tots in the prepared baking dish.
3. In a mixing bowl, combine sour cream, cheese, and mushroom soup. Pour this mixture over the tater tots. Sprinkle onions over the top of the casserole.
4. Bake in the 350 degrees F (175 degrees C) oven for 45 to 60 minutes
