Best Cupcake Ever "Cannoli Cupcakes"
We Have tried this recipe for Cannoli Cupcakes, it turned out really great and loved it.
I'm sure you are going to enjoy it too.
2/3 cup sugar
1 cup all-purpose flour
1/2 cup (1 stick) butter or margarine, melted and cooled
1/4 cup chopped semisweet chocolate
1 recipe Ricotta Filling
Maraschino cherries or candied cherries, for garnish
2 cups (15 oz.) Ricotta Cheese
3 Tbsp. sugar
1-1/2 tsp. vanilla
1 cup whipping cream, whipped
1 cup semisweet mini chocolate chips
Whipped Cream Frosting:
2 cups whipping cream
2 Tbsp. confectioners sugar
1/2 tsp. vanilla
Preheat oven to 350.
Beat the eggs and sugar on medium speed w/ electric mixer for 5 minutes until thick. Gently fold in flour and butter. Pour into floured cupcake/muffin pan (try not to fill over 1/2 of the cupcake pan with batter). Bake for 40 minutes or until toothpick comes out clean from center.
To make filling:
Beat ricotta cheese, sugar, and vanilla on medium speed with mixer, 3 minutes. Fold in whipped cream and chocolate chips.
To make frosting:
Beat cream on high speed until soft peaks form, beat in sugar/vanilla.
Cut each cupcake in half, spread ricotta filling, as thick as you like, replace top halves.
Frost cupcakes and top with cherry. Refrigerate until serving.
