Authentic Mexican Rice Recipe

1 cup of semi-cooked long grain white rice 4 table spoon vegetable oil ½ cup white onion (chopped) 2 glove garlic (minced) 3 table spoon tomato paste 1/3 cup semi-cooked cooked carrots (diced) 2 cups chicken or beef broth 3 pealed tomatoes Directions: Place tomatoes, onion and salt to taste into a blender. Blend it until pureed and smooth. Heat vegetable oil over medium high heat about 3 minutes, than add rice and fry it for about 9 minutes (stir until rice is light golden). Reduce the heat to medium and stir in broth, garlic, tomato paste, and carrots. Cover it and leave it for 10 minutes. Increase heat to medium high and stir it lightly for 8-10 minutes.
