Chicken Paprikosh

Authentic Austrian Chicken Paprikosh Recipe
Ingredients:
-3 to 4 lbs. chicken, cut up
-2 lg. onions, chopped
-1 clove garlic, chopped
-1 to 2 tbsp. paprika
-1 tsp. salt
-2 stalks celery, cut in half with leaves
-1 sm. hot yellow or green pepper cut in half

Directions:
-In large pan lightly brown onion in oil.
-Add chicken and lightly brown on all sides, then add all
the other ingredients.
-Pour 1 1/2 to 2 cups hot water to cover chicken.
-Turn heat to medium
-cover and cook on stove top 1 hour or until done, but not falling off bones.
-Add cold water to 1 tablespoon cornstarch to slightly thicken.

Dumplings:
-1 lg. egg
-1 c. flour
-1 tsp. salt
-1/4 c. cold water

-Mix together with fork and drop by spoon into 3 quarts boiling water.
-Cook until dumplings rise to top (10 to 15 minutes).
-Add to chicken and juice and heat 15 minutes more.
-Can pour over noodles instead.
