Beef Casserole with Feta and Rice from Italy

Make this Italian Beef Casserole dish for dinner or lunch, it's with Feta and Rice and everyone is going to enjoy.

Serving: 4
Ingredients:
2 cup minced beef
1 x onions, medium
12 x mushrooms
1 tbl vegetable oil
3 cup tomatoes
1 tsp garlic, crushed
salt, pepper
2 cup rice, brown
100 gm feta cheese
6 x olives, black
2 tbl parmesan cheese

Directions:
Cook rice in boiling salted water until tender. Drain well.

Dice onions and tomatoes, slice mushroom.

Saute the beef mince in a pan until well browned and set aside.

Saute the onion in the oil slowly for 5 minutes, then add the mushrooms, tomatoes and garlic, and let cook gently uncovered about 10 minutes. Pepper to taste.

Preheat oven to 400F/200C degrees.

Line the bottom of a casserole dish with 1 cup of the rice, add the beef, and crumble over the top the fetta cheese, the olives, and half the sauce. Add the remaining rice and the rest of the sauce, and sprinkle with parmesan.

Cover and bake 30 minutes, remove lid and bake a further 15 minutes.
