African Fish StewAfrican Fish Stew recipeYIELD: 9 servings Ingredients: 2 lb tilefish steaks (boneless) cut into 1 inch chunks 6 cup water 1/4 cup instant minced onion 2 tsp minced garlic 3 x green (unripened) bananas 4 tsp salt divided 1/4 cup vegetable oil 2 1/4 cup chopped tomatoes 3 tbl parsley flakes divided 1 x bay leaf 1/2 tsp ground red pepper 1/4 cup quick-cooking tapioca 1/4 cup dry bread crumbs 5 cup white potatoes in 1 inch chunks 5 cup sweet potatoes in 1/2 inch chunks 4 cup shredded green cabbage Directions:
* In custard cup combine 1/3 cup water, onion and garlic; set aside to soften (about 10 minutes). Cut ends from bananas; using a sharp knife cut down "seams". Place bananas in a bowl of warm water; set aside for 10 minutes for easier peeling.
